LETTERS FROM THE PRESIDENT

Hello fellow Lions,
I am glad it is raining. The webs between my toes were going away. But enough is enough.
This month we will have a guest speaker on Friendly Waters. She will be at our meeting on February 5th. Come to the meeting and see the changes they have made.
In March we will have our Bowling Classic. On March 29th we will have our 23rd Classic at Narrows Plaza Bowl. We need donations and bowlers for this event. If everyone puts in the time they can, we will make this a great success. See Lion Chris for all the information.
The 2019–2020 District 19–C Spring Conference will be held April 17 & 18, 2020, at the LaQuinta Hotel, Tacoma. Newly–installed International Director Allan Hunt is scheduled as the International Guest. Let’s make plans to go and make a big impression.
If you are interested in holding an office this year, tell VP Ann Fowler. She will put you on the nominating list. See related article.

23rd Annual Bowling Classic

RECIPE OF THE MONTH
Aint Nothin’ But the Truth Jambalaya
Ingredients
Broth
- Shells from 2lbs Raw Shrimp
- 6 cups water
- 5 peppercorns
- 1/2 cup chopped onion
- 1 rib celery
- 1 bay leaf
Stew
- 2 lbs Polish sausage (kielbasa) cut in half and sliced in 1/4 inch pieces
- 2 lbs raw shrimp
- 1 cup fine chopped green peppers
- 1 cup fine chopped celery
- 2 cups fine chopped onions
- 1 clove garlic minced or crushed
- 1/2 cup tomato puree
- 2 Tbsp “SmokeeJo’s Datil Pepper Sauce”
- 1 can tomatoes (16 o)
- 1/2 tsp dried thyme
- 1 bay leaf
- 1 tsp dried oregano
- 1 tsp red pepper (ground or crushed – to taste)
- 1/2 tsp dried basil
- 1 tsp fresh ground black pepper
- 1 cup raw rice
Instructions
Peel and de-vein shrimp, saving the shells and heads.
Put shells, heands and other ingredients in saucepan and bring to a boil. Reduce the heat and simmer for 20 minutes. Strain the broth through a sieve crushing the ingredients with a pestle or heavy spoon to get the entire flavor from the shells. Discard shell residue and save broth.
Sear Sausage in a large saucepan over medium heat stirring frequently.
Cook about 10 minutes. Pour off all but 1 tablespoon of fat. Add peppers, celery, onions and garlic. Scrape the bottom of the pan to incorporate the meat particles stuck to the bottom. Cook about 15-20 minutes. Add tomatoes puree, tomatoes and “SmokeeJo’s Datil Pepper Hot Sauce”. Stir to blend and cook for about 3 minutes. Pour the reserved broth and bring to a boil. Add thyme, bay leaf, oregano, red pepper, basil and black pepper. Cook over low heat 1 hour. Add raw rice, cover and cook for 15 minutes. Add shrimp and cook 5 more minutes. Stir in the green onions and serve.
