LETTERS FROM THE PRESIDENT

Hello fellow Lions,
“Stay home and stay safe”. Those words still have meaning. As we start to open up our world again, we must remember those words. Phase two and the following phases don’t mean everything we have worked for goes by the way-side. We must keep social distancing. If we throw everything we worked for away, we will go right back to the beginning.
We had our first Zoom meeting last month. We had 12 fellow Lions on-line for the meeting. Thanks for all who made it. Some of you could not be there for one reason or another but you are still part of the club. This month we will have another on June 9th at 6:30 PM. I hope you can make it. I sent out an email for the site for Zoom. Just click on the link and you will be there.
We have a few things we have to get done this month. First we will have an audit of the books. On June 30 we will have installation of officers. We will have it at our regular meeting place. More information will follow on how that will go on.
The last two years have gone by fast. It was a great privilege to serve with you and for you. I would like to thank my board for a great job the last two years. I know Lion Ann will do a fantastic job.

24th Annual Bowling Classic
While our 23rd Annual Bowling Classic Event is still in limbo pending the re-opening of Bowling Alleys and large gatherings, we have been able to nail down a date for next years event.
We will post more information as it becomes available for this year’s fundraising event.

RECIPE OF THE MONTH
PEACH AND PROSCIUTTO FLATBREADS

Recipe from: goodhousekeeping.com
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Yield: 8 servings
Ingredients
- 1 lb. pizza dough
- 3 peaches or nectarines, each pitted and cut into 8 wedges
- 1 tsp. olive oil
- Kosher salt and pepper
- 2 tbsp. fresh lemon juice
- 2 tsp. chopped tarragon
- 3 oz. Gruyère cheese, grated
- 2 c. baby arugula
- 4 oz. thinly sliced prosciutto
Instructions
- Heat grill to medium. Divide pizza dough in half and shape each piece into a 5- by 14-inch rectangle.
- Toss peaches with oil and 1/4 teaspoon each salt and pepper. Grill dough and peaches until lightly charred, 3 to 5 minutes per side. Transfer peaches to large bowl and pizza dough to cutting board.
- Toss peaches with lemon juice, tarragon, and pinch each salt and pepper. Sprinkle Gruyère over dough and grill, covered, until melted, 2 to 3 minutes.
- Add arugula to peaches and toss to coat. Top cheesy pizza dough with prosciutto and peach-arugula salad.

ADAPTING TO CHANGE
In these changing times we are finding ways to adapt! We have held a couple of Zoom meetings now and will be holding another one on June 9th. Stay Safe All! We will be able to get together for visits soon!
COVID-19 RESOURCES
The COVID-19 Virus is affecting all of us in some way. We may be struggling health-wise, financially, or mentally during this time of quarantine. Please reach out to your fellow Lions, friends, neighbors, loved ones and maybe even strangers. We are all going to need each other to get through. As Lions, we are here to serve, in whatever capacity we may be needed.
If you are feeling sick, or displaying any symptoms of the COVID-19 virus, we urge you to seek medical attention. Some resources can be found on the CDCs website Here .
If you need supplies, please don’t be afraid to reach out to your fellow Lions for assistance. We have younger Lions that are more than willing to help those who are unable to venture out to obtain needed supplies or food. Others may have extra supplies on-hand. Don’t risk your health and safety. Ask for help. We are all here for each other.

PAW PRINTS IN THE SAND
“Paw Prints” Take a look at your day timer. Is it full? No time for yourself? Are you taking time away from your loved ones? Take another look. If you had to prioritize everything, on what basis would you use? Why not prioritize everything you do on the basis of who’s going to be crying at your funeral? When you prioritize in that way, that realization might clear up a lot of things and give you more time to the people that really mater. In this last letter of “Paw Prints” reflect on what you have read in the past year. I hope it has helped your life, or at least made you think. What do you want on your tombstone to summarize your life? How will people remember your, “Paw Prints in the Sand”? Pres. Don Becker
